Here’s How To Make Spiced Almond Butter Molasses Cookies

The details:

Step 1: Preheat the oven to 325 ℉. Line a baking sheet with unbleached parchment paper.

Step 2: Combine all the ingredients in a bowl with a wooden spoon until a dough has formed. Place in the fridge for 10 minutes to make the balls easier to form.

Step 3: Using a cookie scoop or spoon, roll 1 ½ tablespoons of cookie dough into a ball. Place the ball in the bowl of raw sugar and roll around to coat the outside.

Step 4: Remove the cookies from the oven and gently press down on them with the back of a spatula or carefully bang the cookie sheet on the counter to help the cookies flatten.

Step 5: Let the cookies cool 2 minutes on the baking sheet, then remove to a cooling rack. Let cool completely or the cookies will be crumbly. Place in an airtight container for up to 5 days. Enjoy!

Ingredients

  • ¾ cup unsalted raw almond butter stirred well
  • ½ cup all-purpose flour organic unbleached, or almond flour, or oat flour
  • cup coconut sugar or raw sugar
  • ¼ cup unsulphured molasses
  • 1 egg
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • ¼ teaspoon sea salt

For rolling

  • cup raw sugar or coconut sugar in a separate bowl

Instructions

    Snow day here, so after making you soup, I baked up some of these cookies. I had never used almond butter before. The spices with it was a great treat! I sure appreciate your recipes!
