½cupall-purpose flourorganic unbleached, or almond flour, or oat flour
⅓cupcoconut sugaror raw sugar
¼cupunsulphured molasses
1egg
1teaspoonbaking soda
1teaspoonground cinnamon
½teaspoonground cloves
¼teaspoonground ginger
¼teaspoonsea salt
For rolling
⅓cupraw sugar or coconut sugarin a separate bowl

Instructions
Preheat the oven to 325 ℉. Line a baking sheet with unbleached parchment paper.
Combine all the ingredients in a bowl with a wooden spoon until a dough has formed. Place in the fridge for 10 minutes to make the balls easier to form.
Using a cookie scoop or spoon, roll 1 ½ tablespoons of cookie dough into a ball. Place the ball in the bowl of raw sugar and roll around to coat the outside. Place on the baking sheet 2 inches apart. Bake for 8-10 minutes.
Remove the cookies from the oven and gently press down on them with the back of a spatula or carefully bang the cookie sheet on the counter to help the cookies flatten.
Let the cookies cool 2 minutes on the baking sheet, then remove to a cooling rack. Let cool completely or the cookies will be crumbly. Place in an airtight container for up to 5 days. Enjoy!
