Here’s How To Make Winter Vegetable Soup
The details:
Step 1: In a large soup pot, heat avocado oil over medium heat. Add onion and cook, stirring until softened. Add garlic and cook for 1 minute more.
Step 2: Add celery, carrots, turnip (if using), potatoes, and tomato paste. Cook, stirring, for 3-4 minutes.
Step 3: Next, add the canned beans, broth, oregano, salt, and pepper.
Note: I like to take my wooden spoon and smash some of the beans up against the side of the pot. This helps to thicken the soup and give it a slightly thicker texture.
Step 4: Raise heat to medium-high and bring to a boil. Once boiling, lower the heat to medium-low, cover, and simmer for 15 minutes.
Then add the spinach and kale, simmer an additional 10-15 minutes, or until all vegetables are tender.
Serve warm with freshly grated Pecorino Romano cheese or parmesan cheese.

Ingredients
- 3 tablespoons avocado oil
- 1 large sweet onion
- 4 garlic cloves
- 4 stalks celery
- 3 large carrots
- 2 cups diced potatoes or 1 cup potatoes and 1 turnip
- 1 tablespoon tomato paste
- 1 14.5 oz can diced tomatoes
- 1 14.5oz can white beans lightly drained
- 48 oz vegetable broth or more depending on desired consistency
- 1 bunch kale or spinach or a combination
- salt and pepper to taste
- ½ teaspoon dried oregano
- ½ cup pecorino romano or parmesan
