Loaded Healthy Banana Bread Muffins.

In my home, something we all like to reach for in the morning or afternoon, are Loaded Healthy Banana Bread Muffins. I love feeling good after eating a muffin, so I make my banana bread muffins more nutrient-dense by cutting back on the sugar, using Einkorn flour, and adding nuts to the mix. These are a staple around my house because they are satisfying, sweet, and hearty enough to eat with a cup of coffee for breakfast. You have to try them!

If you haven’t tried Einkorn flour before, it is a must.

Einkorn flour is an ancient wheat flour that is high in protein and has less starch than conventional flour.

It also contains more vitamins and minerals and has a lower amount of gluten than regular wheat.

A lot of people who have a gluten sensitivity can actually eat Einkorn flour without any issues! It’s that good.


I love adding quality dark chocolate chips and pecans to the mix.

It really loads these muffins up on flavor and texture. Feel free to substitute the brown sugar for coconut sugar or the pecans for walnuts.

Here’s How To Make Loaded Healthy Banana Bread Muffins

The details:

Step 1: Preheat the oven to 350 degrees.  Line a muffin tin with paper liners and spray with avocado oil spray and set it aside.

Step 2: In a small bowl, combine the Einkorn flour, baking soda, pecans, chocolate chips, and salt.

Step 3: In another medium-sized bowl, combine the butter, oil, sour cream, and brown sugar, eggs, and vanilla. Mix well, then add mashed bananas and mix again.

Step 4: Add the dry ingredients and mix until they are just combined.

Step 5: Pour the batter into your prepared muffin tin and top with a few chocolate chips for a bakery-style muffin.

Bake at 350 degrees for 20-25 minutes until just golden brown. Cool for 5 minutes and enjoy!

Dry Ingredients

  • 2 cups all purpose einkorn flour or organic unbleached all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ cup raw pecans chopped
  • ½ cup dark chocolate chips

Wet Ingredients

  • 3 ripe bananas mashed
  • ¼ cup salted butter melted
  • 1/3 cup avocado oil
  • ¼ cup sour cream I use Good Culture
  • 3 eggs
  • cup organic dark brown sugar
  • 1 teaspoon vanilla extract
