Ingredients
- 2 Cups thinly sliced English cucumbers
- 1 Cup thinly sliced radishes
- 1/2 Cup thinly sliced sweet onion or yellow onion
- 1/2 Teaspoon Celtic sea salt
- 1/3 Cup sour cream
- 1 Teaspoon Raw Local Honey
- 1 Teaspoon white wine vinegar
- 1/4 Teaspoon pepper
How To Make It
Start by washing your cucumber and radish thoroughly under cold water. Next, trim off the ends and discard any bruised or damaged spots.
For the cucumber, you can leave the skin on or peel it off if you prefer a smoother texture.
Place the cucumbers and onions in a bowl and sprinkle the salt over the top. Let the vegetables sit with the salt to draw out the moisture for at least 10 minutes.
Drain as much of the liquid as possible from the cucumbers and onions.
Add the radishes to the bowl and combine.
Make the dressing
In another bowl, combine the sour cream, honey, vinegar, and pepper. Whisk to combine.
Pour the dressing over the salad and toss to combine. Serve chilled.
