Cucumber Radish Salad

This refreshing cucumber radish salad is full of juicy vegetables and tossed in a simple dressing, the perfect way to cool down on a hot day.

Ingredients
  

  • 2 Cups thinly sliced English cucumbers
  • 1 Cup thinly sliced radishes
  • 1/2 Cup thinly sliced sweet onion or yellow onion
  • 1/2 Teaspoon Celtic sea salt
  • 1/3 Cup sour cream
  • 1 teaspoon local raw honey
  • 1 Teaspoon white wine vinegar
  • 1/4 Teaspoon pepper

Instructions
 

  • Start by washing your cucumber and radish thoroughly under cold water. Next, trim off the ends and discard any bruised or damaged spots. 
  • Place the cucumbers and onions in a bowl and sprinkle the salt over the top. Let the vegetables sit with the salt to draw out the moisture for at least 10 minutes.
  • Drain as much of the liquid as possible from the cucumbers and onions. Add the radishes to the bowl and combine.

Make the dressing

  • In another bowl, combine the sour cream, honey, vinegar, and pepper. Whisk to combine.
  • Pour the dressing over the salad and toss to combine. Serve chilled.

Notes

For the cucumber, you can leave the skin on or peel it off if you prefer a smoother texture.
