How To Make Chicken with Asparagus and Mushrooms
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 bundle of asparagus, trimmed and washed
- 8 oz of mushrooms, sliced
- 2 cloves of garlic, minced or 1 teaspoon garlic powder
- 1 tablespoon of olive oil
- 2 tablespoons of butter
- 1/2 organic heavy cream
- 1/3 cup organic chicken stock or bone broth
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
Instructions:
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken breasts and cook for 5-6 minutes on each side, until browned.
- Remove the chicken from the skillet and set aside.
- Add the butter, asparagus, and mushrooms to the skillet and cook for 4-5 minutes, until the vegetables are almost tender.
- Add the minced garlic and cook for an additional minute. Then add the heavy cream and chicken stock.
- Arrange the chicken breasts on top of the vegetables in the skillet.
- Cover the skillet and simmer on low for 5-7 minutes, until the chicken is cooked through. Stir in the parmesan cheese and serve.
