Ingredients
  

  • 3 tablespoons avocado oil
  • 1 large sweet onion
  • 4 garlic cloves
  • 4 stalks celery
  • 3 large carrots
  • 2 cups diced potatoes or 1 cup potatoes and 1 turnip
  • 1 tablespoon tomato paste
  • 1 14.5 oz can diced tomatoes
  • 1 14.5oz can white beans lightly drained
  • 48 oz vegetable broth or more depending on desired consistency
  • 1 bunch kale or spinach or a combination
  • salt and pepper to taste
  • ½ teaspoon dried oregano
  • ½ cup pecorino romano or parmesan

Instructions
 

  • In a large soup pot, heat avocado oil over medium heat. Add onion and cook, stirring until softened. Add garlic and cook for 1 minute more.
  • Add celery, carrots, and potatoes, and tomato paste. Cook, stirring, for 3-4 minutes. 
  • Next, add the canned beans, broth, oregano, salt, and pepper.
  • Raise heat to medium-high and bring to a boil. Lower heat to medium-low and simmer for 15 minutes.
    Add the spinach and kale, simmer an additional 10-15 minutes, or until all vegetables are tender.
    Serve warm with freshly grated Pecorino Romano cheese or parmesan cheese.
