Pepper and Zucchini Chicken Burgers

Pepper and Zucchini Chicken Burgers.

Servings 12 burgers

Ingredients
  

  • 1 lb ground chicken or turkey 93% lean
  • 1 small zucchini, finely chopped
  • 1 small poblano pepper, seeded and finely diced
  • ½ medium red bell pepper, finely diced
  • ½ cup almond flour
  • 1 egg
  • tsp sea salt
  • ¾ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • 2 tbsp flat-leaf parsley, finely chopped
  • 3 tbsp avocado oil for pan searing before baking

Instructions
 

  • In a large mixing bowl, combine all the ingredients except for the avocado oil.
    Use a dough whisk to mix everything, then use an ice cream scoop to make burgers or meatball-size patties.
  • Preheat the oven to 425℉.
    Add the avocado oil to a skillet heated over medium heat. Sear the burgers for about 3-4 minutes per side or until golden brown.
    Remove to a baking sheet lined with unbleached parchment paper.
  • Place the burgers in the oven for 7-10 minutes, or until fully cooked.

    These are so good, i make them 2x a week. I like to have them at breakfast with eggs to boost protein for the day. So delicious!
