Pepper and Zucchini Chicken Burgers.
Ingredients
- 1 lb ground chicken or turkey 93% lean
- 1 small zucchini, finely chopped
- 1 small poblano pepper, seeded and finely diced
- ½ medium red bell pepper, finely diced
- ½ cup almond flour
- 1 egg
- 1¼ tsp sea salt
- ¾ tsp garlic powder
- ½ tsp onion powder
- ½ tsp black pepper
- 2 tbsp flat-leaf parsley, finely chopped
- 3 tbsp avocado oil for pan searing before baking
Instructions
- In a large mixing bowl, combine all the ingredients except for the avocado oil. Use a dough whisk to mix everything, then use an ice cream scoop to make burgers or meatball-size patties.
- Preheat the oven to 425℉.Add the avocado oil to a skillet heated over medium heat. Sear the burgers for about 3-4 minutes per side or until golden brown.Remove to a baking sheet lined with unbleached parchment paper.
- Place the burgers in the oven for 7-10 minutes, or until fully cooked.
