To get started making this recipe, you’ll want to gather these ingredients:
- extra virgin olive oil
- sweet onion
- garlic cloves
- gold potatoes
- can diced tomatoes
- filtered water or broth
- fresh green beans
- coconut sugar (optional if your tomatoes are not in season and sweet)
- Sea salt and pepper to taste
- salted butter (or more olive oil)
Here’s How To Make My Skillet Braised Green Beans with Potatoes.
Step by Step Instructions
- In a large heavy skillet, heat the oil over medium heat and add the diced onion.Saute for 5 minutes then add in the crushed garlic and saute 2 minutes more.
- Next add in the cubed potatoes, diced tomatoes with liquid, water, sea salt and black pepper.Bring to a simmer, then add in the green beans and cover with a lid. Reduce heat to medium-low and simmer for 30 minutes.
- After 30 minutes, remove the lid and stir everything together.Simmer for 10-15 more minutes or until everything is soft and braised.
- Remove from the heat and in coconut sugar (optional) and 2 tbsp butter or olive oil.Season with more sea salt and pepper if necessary, and serve!

- 3 gold potatoes, peeled and cubed ½ inch thick
- 1 15 oz can diced tomatoes with liquid
- 1/2 cup filtered water or broth
- 2 lbs fresh green beans
- 1 tsp coconut sugar (optional if your tomatoes are not in season and sweet)
- Sea salt and pepper to taste
- 2 tbsp salted butter (or more olive oil)
