Skillet Braised Green Beans with Potatoes

Ingredients
  

  • 1/3 cup extra virgin olive oil
  • 1 sweet onion, diced
  • 3-4 garlic cloves, crushed
  • 3 gold potatoes, peeled and cubed ½ inch thick
  • 1 15 oz can diced tomatoes with liquid
  • 1/2 cup filtered water or broth
  • 2 lbs fresh green beans
  • 1 tsp coconut sugar (optional if your tomatoes are not in season and sweet)
  • Sea salt and pepper to taste
  • 2 tbsp salted butter (or more olive oil)

Instructions
 

  • In a large heavy skillet, heat the oil over medium heat and add the diced onion.
    Saute for 5 minutes then add in the crushed garlic and saute 2 minutes more.
  • Next add in the cubed potatoes, diced tomatoes with liquid, water, sea salt and black pepper.
    Bring to a simmer, then add in the green beans and cover with a lid. Reduce heat to medium-low and simmer for 30 minutes.
  • After 30 minutes, remove the lid and stir everything together.
    Simmer for 10-15 more minutes or until everything is soft and braised.
  • Remove from the heat and in coconut sugar (optional) and 2 tbsp butter or olive oil.
    Season with more sea salt and pepper if necessary, and serve!
