In a large heavy skillet, heat the oil over medium heat and add the diced onion. Saute for 5 minutes then add in the crushed garlic and saute 2 minutes more.
Next add in the cubed potatoes, diced tomatoes with liquid, water, sea salt and black pepper. Bring to a simmer, then add in the green beans and cover with a lid. Reduce heat to medium-low and simmer for 30 minutes.
After 30 minutes, remove the lid and stir everything together. Simmer for 10-15 more minutes or until everything is soft and braised.
Remove from the heat and in coconut sugar (optional) and 2 tbsp butter or olive oil. Season with more sea salt and pepper if necessary, and serve!
