To get started making this recipe, you’ll want to gather these ingredients:
- 1 tbsp avocado oil
- 1 small sweet onion, diced
- 2 cloves garlic minced
- 2 cups rhubarb fresh or frozen diced (4-5 stalks)
- ¼ cup water or broth
- ¾ cup coconut sugar or brown sugar
- 1 6 oz can tomato paste
- ¼ – ½ cup apple cider vinegar
- 1 Tbsp Dijon mustard
- 1 Tbsp chili powder
- 2 Tbsp Worcestershire sauce
- sea salt and pepper to taste
Here’s How To Make My Homemade Rhubarb Barbecue Sauce
Step by Step Instructions
- In a large saucepan, heat avocado oil over medium heat.
- Add onion and garlic and sauté until translucent, 3-5 minutes.
- Add the diced rhubarb and water. Cook for 5 minutes or until rhubarb has started to soften.
- Next, stir in coconut sugar, tomato paste, apple cider vinegar, Dijon mustard, chili powder, Worcestershire sauce, salt and pepper.Bring to the mixture to a boil, then simmer on low for 30 to 45 minutes until the rhubarb has broken down and the sauce has thickened.
- Optional: For a smoother finish, use an immersion blender or food processor to puree sauce.
- Store in fridge for 7 to 10 days or in the freezer for up to 6 months.
