Everyday Gut-Friendly Garden Salad
Equipment
- medium salad bowl
Ingredients
For the salad
- 3 handfuls salad greens, chopped romaine, spring mix, etc.
- 1 Heirloom garden tomato, sliced into wedges
- 1 mini cucumber, sliced horizontally and then cut into ¼ inch half moons
- ¼ viadalia onion, thinly sliced
- ¼ cup fresh basil leaves, thinly sliced
- 3-4 garlic stuffed olives, sliced
- 1 tbsp raw sauerkraut
For the dressing
- 2 tbsp olive oil
- 1 tbsp raw apple cider vinegar
- ¼ lemon, juiced
- 1 clove garlic, grated or minced
- sea salt and pepper to taste
Instructions
- Prepare the garden vegetables and add to a salad bowl.
- In a small glass jar, combine the salad dressing ingredients and shake well to mix. Taste and adjust salt and pepper accordingly.
- Drixxle the dressing over the salad, toss to combine, and serve immediately.
