Classic Loaded Chicken Salad
Ingredients
- 2 cups cooked chicken, chopped into a 3/4-inch dice
- ½ cup red grapes, halved
- ¼ medium red onion
- ¼ cup celery, diced
- ⅓ cup pecans, chopped
- ¼ cup plain whole milk greek yogurt or sour cream
- ¼ cup mayonaise
- 1 tbsp fresh tarragon, chopped
- ½ tbsp apple cider vinegar
- 2 tsp raw honey
- ½ tsp poppy seeds optional
- sea salt and pepper, to taste
Instructions
- In a medium-size bowl, whisk together the Greek yogurt, mayo, apple cider vinegar, honey, poppy seeds, sea salt, and pepper.
- Next, add the chicken, grapes, onion, celery, pecans, and tarragon to the dressing. Toss everything to combine. Serve well-chilled on bread, lettuce, or crackers.This salad keeps well for 3-5 days in the refrigerator.
