- 1 tbsp avocado oil
- 1 small sweet onion, diced
- 2 cloves garlic minced
- 2 cups rhubarb fresh or frozen diced (4-5 stalks)
- ¼ cup water or broth
- ¾ cup coconut sugar or brown sugar
- 1 6 oz can tomato paste
- ¼ - ½ cup apple cider vinegar
- 1 Tbsp Dijon mustard
- 1 Tbsp chili powder
- 2 Tbsp Worcestershire sauce
- sea salt and pepper to taste

In a large saucepan, heat avocado oil over medium heat.
Add onion and garlic and sauté until translucent, 3-5 minutes.
Add the diced rhubarb and water. Cook for 5 minutes or until rhubarb has started to soften.
Next, stir in coconut sugar, tomato paste, apple cider vinegar, Dijon mustard, chili powder, Worcestershire sauce, salt and pepper. Bring to the mixture to a boil, then simmer on low for 30 to 45 minutes until the rhubarb has broken down and the sauce has thickened. Optional: For a smoother finish, use an immersion blender or food processor to puree sauce.
Store in fridge for 7 to 10 days or in the freezer for up to 6 months.
