Homemade Rhubarb Barbecue Sauce.

Homemade rhubarb barbecue sauce is perfect for all your summer grilling! Perfect on chicken and delicious on wood-fired pizza. Grab your grilling favorites and slather them in this delicious seasonally-inspired barbecue sauce for an extra special al fresco meal.

Equipment

  • large saucepan
  • storage jar or silicone freezer bag

Ingredients
  

  • 1 tbsp avocado oil
  • 1 small sweet onion, diced
  • 2 cloves garlic minced
  • 2 cups rhubarb fresh or frozen diced (4-5 stalks)
  • ¼ cup water or broth
  • ¾ cup coconut sugar or brown sugar
  • 1 6 oz can tomato paste
  • ¼ - ½ cup apple cider vinegar
  • 1 Tbsp Dijon mustard
  • 1 Tbsp chili powder
  • 2 Tbsp Worcestershire sauce
  • sea salt and pepper to taste

Instructions
 

  • In a large saucepan, heat avocado oil over medium heat.
  • Add onion and garlic and sauté until translucent, 3-5 minutes.
  • Add the diced rhubarb and water. Cook for 5 minutes or until rhubarb has started to soften.
  • Next, stir in coconut sugar, tomato paste, apple cider vinegar, Dijon mustard, chili powder, Worcestershire sauce, salt and pepper.
    Bring to the mixture to a boil, then simmer on low for 30 to 45 minutes until the rhubarb has broken down and the sauce has thickened.
  • Optional: For a smoother finish, use an immersion blender or food processor to puree sauce.
  • Store in fridge for 7 to 10 days or in the freezer for up to 6 months.
