Creamy Spinach Artichoke Alfredo.
Equipment
- stock pot
- small saucepan
Ingredients
- 1 stick salted butter
- 3 ounce cream cheese, room temperature is best
- 1 pint heavy cream
- 1½ tsp garlic powder
- ¼ cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 14 oz can quartered artichokes in water, drained and roughly chopped
- 5 oz frozen cut spinach
- a few passes of fresh nutmeg on a microplane optional, but adds a delicious nutty note.
- salt and pepper to taste
- 1 lb pasta of choice
- 1-2 roma tomatoes, diced
Instructions
- Melt the butter in a saucepan over medium-low heat. Mix in the cream cheese.
- Stir in the cream, mozzarella cheese, parmesan cheese, garlic powder, artichokes, and spinach. Season with salt and pepper to taste.Simmer on low while the pasta cooks.
- Cook the pasta according to package directions, drain, and immediately toss the pasta with the spinach artichoke Alfredo sauce.
- Sprinkle with the chopped tomato for a fresh note. This pairs really well with my Oven-Baked Parmesan Chicken . Enjoy!!
