Almond Butter Chocolate Chip Blondies.

- 8 x 8 baking pan
Ingredients
- 1 cup creamy natural almond butter the kind with a runny consistency
- 2 eggs
- ½ cup coconut sugar or organic brown sugar
- ¼ cup pure maple syrup
- 2 tsp vanilla extract
- 1 tbsp avocado oil or coconut oil
- 2 tbsp oat flour
- ½ tsp baking soda
- ¼ tsp sea salt
- ⅓ cup chocolate chips (semi-sweet or dark)
For Topping
- 2-3 tbsp chocolate sprinkles or more chocolate chips (semi-sweet or dark)
Instructions
- Preheat the oven to 350℉. Line a 8 x 8 baking dish with unbleached parchment paper.
- In a mixing bowl, mix the almond butter, egg, vanilla extract, avocado oil, and coconut sugar until fully combined. Add in the baking soda and salt and mix again.
- Fold in the chocolate chips. Pour the batter into the pan and spread it out in an even layer. Top with chocolate sprinkles or more chocolate chips (if using).
- Bake for 30-35 minutes until golden brown and a toothpick comes out semi-clean.Cool, then slice into squares. Store covered in the fridge for up to 5 days.
