Almond Butter Chocolate Chip Blondies.

Equipment

  • 8 x 8 baking pan

Ingredients
  

  • 1 cup creamy natural almond butter the kind with a runny consistency
  • 2 eggs
  • ½ cup coconut sugar or organic brown sugar
  • ¼ cup pure maple syrup
  • 2 tsp vanilla extract
  • 1 tbsp avocado oil or coconut oil
  • 2 tbsp oat flour
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • cup chocolate chips (semi-sweet or dark)

For Topping

  • 2-3 tbsp chocolate sprinkles or more chocolate chips (semi-sweet or dark)

Instructions
 

  • Preheat the oven to 350℉. Line a 8 x 8 baking dish with unbleached parchment paper.
  • In a mixing bowl, mix the almond butter, egg, vanilla extract, avocado oil, and coconut sugar, and maple syrup until fully combined.
    Then add in the oat flour, baking soda, and salt. Mix again.
  • Fold in the chocolate chips. Pour the batter into the pan and spread it out in an even layer. Top with chocolate sprinkles or more chocolate chips (if using).
  • Bake for 30-35 minutes until golden brown and a toothpick comes out semi-clean.
    Cool, then slice into squares. Store covered in the fridge for up to 5 days.

    So easy to make. I didn’t have almond butter so I used the Costco organic creamy peanut butter instead. The were delicious
