Creamy Spinach Artichoke Alfredo.

Equipment

  • stock pot
  • small saucepan

Ingredients
  

  • 1 stick salted butter
  • 3 ounce cream cheese, room temperature is best
  • 1 pint heavy cream
  • tsp garlic powder
  • ¼ cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 14 oz can quartered artichokes in water, drained and roughly chopped
  • 5 oz frozen cut spinach
  • a few passes of fresh nutmeg on a microplane optional, but adds a delicious nutty note.
  • salt and pepper to taste
  • 1 lb pasta of choice
  • 1-2 roma tomatoes, diced

Instructions
 

  • Melt the butter in a saucepan over medium-low heat. Mix in the cream cheese.
  • Stir in the cream, mozzarella cheese, parmesan cheese, garlic powder, artichokes, and spinach. Season with salt and pepper to taste.
    Simmer on low while the pasta cooks.
  • Cook the pasta according to package directions, drain, and immediately toss the pasta with the spinach artichoke Alfredo sauce.
  • Sprinkle with the chopped tomato for a fresh note. This pairs really well with my Oven-Baked Parmesan Chicken . Enjoy!!
