Healthy Elizabeth
Prep Time 10 minutes
Chill time 2 hours
Total Time 2 hours 10 minutes
Servings 2 9 - inch pie crusts

Ingredients

  • 3 cups all purpose flour
  • 2 sticks or 1 cup salted butter cut into small cubes
  • 1/4 cup raw sugar
  • 1 tsp sea salt
  • ½ cup ice cold water

Instructions

To make the crust

  • Place the flour, butter, sugar, and salt in a food processor. Pulse the mixture together until it resembles pea-size crumbles.
  • Continue pulsing the food processor as you slowly drizzle in the ice water. The mixture should just barely start to come together.
  • Turn the crumbs out onto a lightly floured work surface and knead the crust together just a few times until a nice ball comes together.
Cut the dough in half, then flatten each half into a 1-inch thick disk.
  • Wrap the pie crusts in plastic wrap and place in the fridge for at least 2 hours before using.
*You can also place the pie crusts in the freezer at this point, pie crusts freeze perfectly! Just thaw in the fridge before using.
  • After the crusts have chilled for 2 hours, roll the pie crusts out on a lightly floured surface, making two 9 inch circles.
  • *Alternatively you can use just one of the pie crusts and freeze the other one if making something such as a quiche.
