Slow Cooker White Beans and Sausage.

Ingredients
  

  • 1 pound dry great northern beans soaked in water over night, then rinsed
  • 1 pound Polish smoked sausage sliced
  • 1 sweet onion diced
  • 2 green bell pepper diced
  • 3 large carrots
  • 2 stalks celery
  • 3 cloves garlic minced
  • 2 bay leaves
  • 1/2 tablespoon cajun seasoning
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 4-5 cups vegetable broth or chicken broth
  • salt and pepper to taste

Instructions
 

  • Soak the dry white beans in several cups of filtered water overnight, they should double in size and be tender beans.
  • Chop all vegetables, the polish sausages, and add to slow cooker or crock pot. Add remaining ingredients, including vegetable broth.
  • Stir until mixed well.Cover and cook on low for 8 hours. After the 8 hours, mash some of the beans with the back of a wooden spoon to thicken the dish. Serve!
