Nothing beats Slow-Cooker White Beans and Sausage in the crock pot on a chilly day. I love waking up early on fall and winter mornings when it’s still dark outside and tossing hearty meat and lots of vegetables into my crock pot. It’s all the heartiness we love, made healthier with loads of veggies you’ll feel good about all season long.

Here’s How To Make Slow Cooker White Beans and Sausage.
The details
Step 1:
Soak the dry white beans in several cups of filtered water overnight, they should double in size and be tender beans.
Step 2:
Chop all vegetables, the polish sausages, and add to slow cooker or crock pot. Add remaining ingredients, including vegetable broth.
Step 3: Stir everything together until it is mixed well. Cover and cook on low for 8 hours. After the 8 hours, mash some of the beans with the back of a wooden spoon to thicken the dish.
If you find its too thick you can add a splash more broth or a filtered water. To serve we love adding a little raw sharp cheddar cheese!

- 1 pound dry great northern beans soaked in water over night, then rinsed
- 1 pound Polish smoked sausage sliced
- 1 sweet onion diced
- 2 green bell pepper diced
- 3 large carrots
- 2 stalks celery
- 3 cloves garlic minced
- 2 bay leaves
- 1/2 tablespoon cajun seasoning
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 4-5 cups vegetable broth or chicken broth
- salt and pepper to taste
