Slow Cooker Smokey Turkey and Bean Soup

Ingredients
  

  • 1 tbsp olive oil
  • 2 tbsp pastured beef tallow or more olive oil/ or butter
  • 3 large carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium sweet onion, diced
  • 5-6 cloves garlic, minced
  • 2 tsp paprika
  • 1 tsp italian seasoning
  • 2 bay leaves
  • 3 cans cannellini beans, 2 of the cans I drained
  • 6-8 cups chicken broth , turkey both or bone broth
  • 2 smoked turkey legs, ham hock or left over turkey or ham meat
  • sea salt and pepper to taste

Instructions
 

  • In the bowl of a slow cooker, add all of the ingredients (optional: sauté the vegetables on sauté mode before adding the broth and meat) to the slow cooker.
    Set to high for 4 hours or low for 6.
  • Serve with a sprinkle of shredded cheddar or parmesan cheese.
