Slow Cooker Smokey Turkey and Bean Soup
Equipment
- Slow Cooker
Ingredients
- 1 tbsp olive oil
- 2 tbsp pastured beef tallow or more olive oil/ or butter
- 3 large carrots, chopped
- 2 stalks celery, chopped
- 1 medium sweet onion, diced
- 5-6 cloves garlic, minced
- 2 tsp paprika
- 1 tsp italian seasoning
- 2 bay leaves
- 3 cans cannellini beans, 2 of the cans I drained
- 6-8 cups chicken broth , turkey both or bone broth
- 2 smoked turkey legs, ham hock or left over turkey or ham meat
- sea salt and pepper to taste
Instructions
- In the bowl of a slow cooker, add all of the ingredients (optional: sauté the vegetables on sauté mode before adding the broth and meat) to the slow cooker. Set to high for 4 hours or low for 6.
- Serve with a sprinkle of shredded cheddar or parmesan cheese.
