Equipment

  • 1 baking sheet
  • unbleached parchment paper sheet

Ingredients

  • 1 pound fresh, wild-caught salmon
  • 2 tbsp white or red miso paste organic if possible
  • 2 tbsp coconut aminos
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • ½ tbsp toasted sesame oil
  • ½ tbsp white sesame seeds
  • salt to taste

Instructions

  • In a glass jar or mixing bowl, mix all the ingredients except the salmon, making sure the miso paste has been fully incorporated.
  • Place the salmon filet or filets on a parchment lined baking sheet.
Drizzle 2/3 of the miso glaze over the top of the salmon, reserving the rest of the glaze to drizzle over the salmon once cooked.
  • Cover and place in the fridge for 30 minutes to marinate. Then remove the cover or plastic wrap and set it on the counter while the oven preheats.
    Preheat the oven to 400℉.
  • Cook the salmon for 10-15 minutes until nicely browned and the salmon has reached 130℉. Let the salmon rest for 5 minutes before drizzling with extra miso glaze and serving.
