Fresh Salad Greens with Warm Bacon Dressing

Fresh greens with warm bacon dressing is a healthy and delicious way to enjoy salad greens from the garden or market. The combination of bright, fresh greens and warm bacon dressing is a classic and much-loved dish.

Ingredients
  

  • 4 Slices bacon chopped
  • 1 shallot chopped
  • 1/4 Cup bacon drippings
  • 3 Tbsp white wine vinegar
  • 1/2 Tbsp honey
  • salt and pepper to taste
  • splash water to thin
  • 4 Ounces Baby Bella mushrooms sliced
  • 4 Ounces lettuce or spinach
  • 2 eggs boiled, peeled, and sliced

Instructions
 

  • Cook the bacon in a large skillet over medium heat until it is crisp, roughly 6 to 8 minutes. Remove the bacon from the skillet, reserving the fat.
  • In the same skillet over low heat, sauté the shallot in the bacon drippings until softened, 4 to 6 minutes.
  • To the shallots add vinegar, honey, salt, and pepper. Whisk it all together. Add a splash of water to thin out the dressing.
    Add the bacon crumbles to the warm dressing right before serving.

To serve

  • In a large bowl add lettuce and spinach, sliced mushrooms, and sliced boiled eggs. Drizzle the salad with warm bacon dressing, toss, and serve.
