Fresh greens with warm bacon dressing is a healthy and delicious way to enjoy salad greens from the garden or market. The combination of bright, fresh greens and warm bacon dressing is a classic and much-loved dish.
Cook the bacon in a large skillet over medium heat until it is crisp, roughly 6 to 8 minutes. Remove the bacon from the skillet, reserving the fat.
In the same skillet over low heat, sauté the shallot in the bacon drippings until softened, 4 to 6 minutes.
To the shallots add vinegar, honey, salt, and pepper. Whisk it all together. Add a splash of water to thin out the dressing. Add the bacon crumbles to the warm dressing right before serving.
To serve
In a large bowl add lettuce and spinach, sliced mushrooms, and sliced boiled eggs. Drizzle the salad with warm bacon dressing, toss, and serve.
