1fennel bulbtops trimmed off and bulb thinly sliced (save 1 tbsp of fennel fronds and chop them)

1tbspraw apple cider vinegar

Prepare the cabbage, fennel, and apple slices.
In a large mixing bowl, add the mayo, apple cider vinegar, honey mustard, cane sugar (if using), poppyseeds, and roughly 1 tbsp of reserved fennel fronds. Season to taste with salt and pepper. Whisk until smooth and creamy.*If you want a thinner dressing just add 1-2 tablespoons of water.
Add the cabbage, fennel, and apple to the dressing and toss until all the produce is lightly coated in the dressing. Chill for at least 30 minutes before serving.
