Fennel and Green Apple Cabbage Slaw
Equipment
- large mixing bowl
Ingredients
- ½ green cabbage thinly sliced or grated
- 1 fennel bulb tops trimmed off and bulb thinly sliced (save 1 tbsp of fennel fronds and chop them)
- 1 green apple cut into thin slices or matchsticks
- ½ cup good mayo
- 1 tbsp raw apple cider vinegar
- ½ tbsp honey mustard
- 1 tsp cane sugar optional
- ½ tsp poppyseeds
- salt and pepper to taste
Instructions
- Prepare the cabbage, fennel, and apple slices.
- In a large mixing bowl, add the mayo, apple cider vinegar, honey mustard, cane sugar (if using), poppyseeds, and roughly 1 tbsp of reserved fennel fronds. Season to taste with salt and pepper. Whisk until smooth and creamy.*If you want a thinner dressing just add 1-2 tablespoons of water.
- Add the cabbage, fennel, and apple to the dressing and toss until all the produce is lightly coated in the dressing. Chill for at least 30 minutes before serving.
