Fennel and Green Apple Cabbage Slaw

Equipment

  • large mixing bowl

Ingredients
  

  • ½ green cabbage thinly sliced or grated
  • 1 fennel bulb tops trimmed off and bulb thinly sliced (save 1 tbsp of fennel fronds and chop them)
  • 1 green apple cut into thin slices or matchsticks
  • ½ cup good mayo
  • 1 tbsp raw apple cider vinegar
  • ½ tbsp honey mustard
  • 1 tsp cane sugar optional
  • ½ tsp poppyseeds
  • salt and pepper to taste

Instructions
 

  • Prepare the cabbage, fennel, and apple slices.
  • In a large mixing bowl, add the mayo, apple cider vinegar, honey mustard, cane sugar (if using), poppyseeds, and roughly 1 tbsp of reserved fennel fronds.
    Season to taste with salt and pepper.
    Whisk until smooth and creamy.
    *If you want a thinner dressing just add 1-2 tablespoons of water.
  • Add the cabbage, fennel, and apple to the dressing and toss until all the produce is lightly coated in the dressing.
    Chill for at least 30 minutes before serving.
