Rinse the rice in a fine mesh sieve until the water is clear.
In a medium size saucepan over medium high heat, add the water and coconut milk. Bring the mixture to a boil.
Once boiling, add the rice and salt and bring back to a low simmer.
Cover the pot and let simmer over low heat for 15 minutes. After that, remove the pot from the heat and keep it covered for another 10-15 minutes until all the liquid has been absorbed.
Remove the lid from the pot and fluff the rice with a fork.
Keep in an air-tight container in the fridge for up to 5 days.
