Prepare the vegetables. Heat oil in a large soup pot over medium-high heat. Then add the onions, celery, and carrots and cook for 6-8 minutes until softened.
Next, add the mushrooms and cook for another 6-8 minutes until the mushrooms are golden. Add the garlic and cook for another 1-2 minutes.
Add the wild rice and stir for 1-2 minutes, allowing the rice to toast a bit. Then season with poultry seasoning and salt and pepper to your liking.
Add the broth stir to combine. Bring to a soft boil and cover. Cook over medium heat for 35-40 minutes or until the rice is tender.
Remove the lid and stir in the coconut milk. Allow the soup to cook for 5 minutes longer, until the coconut milk has fully melted and combined. Serve hot.
