This Cozy Dairy-Free Wild Rice Soup is the perfect cool weather soup, add a slice of fresh bread this soup will be a crowd pleaser.

Equipment

  • 1 large soup pot

Ingredients
  

  • 3 tablespoons olive oil or avocado oil
  • 1 sweet onion diced
  • 1 pound carrots chopped
  • 3 stalks celery chopped or diced
  • 16 ounces baby Bella mushrooms sliced
  • 4 garlic cloves minced
  • 1 cup wild rice blend I use the brand Lundberg
  • 1 teaspoon poultry seasoning
  • 4 cups vegetable broth I use my recipe for the easiest homemade vegetable broth
  • 1 can full fat coconut milk
  • salt and pepper to taste

Instructions
 

  • Prepare the vegetables. Heat oil in a large soup pot over medium-high heat. Then add the onions, celery, and carrots and cook for 6-8 minutes until softened.
  • Next, add the mushrooms and cook for another 6-8 minutes until the mushrooms are golden. Add the garlic and cook for another 1-2 minutes.
  • Add the wild rice and stir for 1-2 minutes, allowing the rice to toast a bit. Then season with poultry seasoning and salt and pepper to your liking.
  • Add the broth stir to combine. Bring to a soft boil and cover. Cook over medium heat for 35-40 minutes or until the rice is tender.
  • Remove the lid and stir in the coconut milk. Allow the soup to cook for 5 minutes longer, until the coconut milk has fully melted and combined. Serve hot.
