My Cabbage and Beef Soup made in the Instant Pot or slow cooker is one of the easiest rustic soups I make in my home. I always have ground beef in the fridge or freezer, and I love how inexpensive and filling cabbage is. It only takes a couple minutes to put together and keeps in the fridge very well.
6cupschopped cabbage1 small head, cut into 1 inch chunks
1sweet oniondiced
1green bell pepperdiced
15ouncescrushed tomatoesI like fire roasted canned tomatoes
15ouncesdiced tomatoes with medium green chilis
3-4cupsbeef broth
4clovesgarlicminced
½teaspoongarlic powder
1teaspoondried oregano
salt and pepperto taste
sour creamoptional for topping

Instructions
In an Instant pot on sauté mode or a large skillet, add avocado oil and brown the ground beef, breaking it apart with a wooden spoon.
Place cabbage, onion, and bell pepper in Instant Pot or slow cooker. Add the cooked ground beef if using a slow cooker.
Add remaining ingredients: tomatoes, broth, garlic, and seasonings.
Put lid on, set the valve to seal. Cook on manual pressure (high) for 30 minutes. Allow to release pressure naturally or for at least 10 minutes. Slow cooker version: Cover and cook on LOW for 6 to 8 hours or on HIGH for 4 to 5 hours.
