Cabbage and Beef Soup.

My Cabbage and Beef Soup made in the Instant Pot or slow cooker is one of the easiest rustic soups I make in my home. I always have ground beef in the fridge or freezer, and I love how inexpensive and filling cabbage is. It only takes a couple minutes to put together and keeps in the fridge very well. This cabbage and ground beef soup is nourishing and takes almost no effort to put together.

Here’s How To Make Cabbage and Beef Soup

The details:

Step 1: In a large skillet or in Instant pot on sauté mode, add avocado oil and brown the ground beef, breaking it apart with a wooden spoon.

Step 2: Place cabbage, onion, and bell pepper in Instant Pot or slow cooker. Add the cooked ground beef if using a slow cooker.

Step 3: Add remaining ingredients: tomatoes, broth, garlic, and seasonings.

Step 4:

Put lid on, set the valve to seal. Cook on manual pressure (high) for 30 minutes. Allow to release pressure naturally or for at least 10 minutes.

Slow cooker version: Cover and cook on LOW for 6 to 8 hours or on HIGH for 4 to 5 hours.

Step 5: Top with a scoop of sour cream. (Optional)

Ingredients

  • 1 pound ground beef 100% grass fed
  • 1 tablespoon avocado oil
  • 6 cups chopped cabbage 1 small head, cut into 1 inch chunks
  • 1 sweet onion diced
  • 1 green bell pepper diced
  • 15 ounces crushed tomatoes I like fire roasted canned tomatoes
  • 15 ounces diced tomatoes with medium green chilis
  • 3-4 cups beef broth
  • 4 cloves garlic minced
  • ½ teaspoon garlic powder
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • sour cream optional for topping
