Sourdough Cheesy Burger Buns.

For the Sourdough Bun
- 500 grams bread flour or all-purpose
- 400 grams sourdough starter
- 300 grams warm water (80-90℉)
- 15 grams honey or sugar
- 10 grams sea salt
For the cheeseburger filling
- 1 lb lean ground beef
- ½ small sweet onion, finely diced
- 2 cloves garlic, crushed or minced
- ¾ cup ketchup
- ½ tbsp worcestershire sauce
- 8 sliced cheddar cheese
- sea salt and pepper, to taste
Instructions
Make the Sourdough Bun
- In a dough tub or mixing bowl, combine the bread flour, warm water, sourdough starter, honey, and sea salt. Mix everything together until no dry flour remains and a smooth dough forms. Cover the bowl and let the dough rest for 20 minutes.
- After 20 minutes, lightly wet your hands with water. Gently stretch one edge of the dough up and fold it over onto itself. Rotate the bowl 90 degrees and repeat, stretching and folding the dough a total of four times. After the fourth stretch, flip the dough over so that the seam side is facing down. Place the lid back on the tub and move onto the bulk ferment.
Bulk Ferment
- Allow the covered dough to rise on the countertop for about 2 hours. Note: It may take more or less time to rise depending on factors such as the warmth of your kitchen, the activity level of your sourdough starter, and the age of your starter. The dough should double in size and have bubbles forming on the top of the dough.
Make the Cheeseburger Filling
- In a large skillet, cook the ground beef and onion over medium heat until meat is no longer pink. Next, stir in ketchup, worcestershire sauce, salt, and pepper. Remove from the heat and set aside to cool slightly.
- Turn the dough out onto a work surface and divide it into 16 pieces. On a lightly floured surface, gently roll out and stretch each piece into a 5-in. disk. Top each disk with cheese and about 3 tablespoons beef mixture. Bring dough over filling to center, then pinch edges to seal the bun.
- Place the bun edges down on a greased baking sheet. Cover with plastic wrap or a tea towel and let rise in a warm place until doubled, about 20 minutes. Spray the tops with avocado oil spray.
- Bake at 400° for 15-20 minutes or until golden brown! Refrigerate leftovers for up to 3 days.
