Slow Cooker Meatballs In Tomato Sauce
Ingredients
For the sauce
- 1 tbsp avocado oil
- 28 oz can crushed tomatoes
- 5.5 oz tomato paste
- 1 sweet onion finely diced
- 1 carrot peeled and finely diced
- 4 garlic cloves minced
- 2 tsp coconut sugar
- ¼ tsp red pepper flakes
- ¼ cup fresh basil thinly sliced for serving
For the meatballs
- 1 lb lean ground beef
- 1 lb ground pork or pork sausage
- ¾ cup fresh breadcrumbs
- ⅓ cup whole milk
- 3 cloves garlic minced
- 2 eggs
- ¼ cup flat leaf parsley chopped
- ¼ cup fresh grated parmesan cheese
- 1 tsp salt
- Pepper to taste
Instructions
- Add the avocado oil, onion, carrot, and garlic into the slow cooker. Saute for 5 minutes (if your slow cooker has a saute mode, if not – just add the ingredients in the slow cooker).
- Next, add the tomato paste, salt, pepper, red pepper flakes, and crushed tomatoes to the slow cooker and stir until everything is combined.
- In a mixing bowl, add the ground beef, pork, breadcrumbs, milk, eggs, garlic, parsley, parmesan, salt and pepper. Use a dough hook to stir together the meat mixture until just combined. Use a large ice cream scooper to create roughly 18 meatballs.
- Place the meatballs into the tomato sauce in the slow cooker. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- After cooking, skim off any fat from the surface and sprinkle with fresh basil and parmesan.
- Serve on its own with crusty bread or over a bed of pasta.

Elizabeth, I made your lovely meatballs in tomato sauce. It was wonderful! My husband and grandson loved it over pasta. Since I eat low carb I enjoyed mine over some cabbage that I had shredded and cooked in bacon grease. It was so good! Thank you for inspiring me with your lovely recipes.
