One-Pot Creamy Italian Soup with Sausage.
Equipment
- dutch oven
Ingredients
- 1 tbsp avocado oil
- 1 lb ground italian sausage
- 2 tsp italian seasoning
- 3-4 cloves garlic, minced
- ¼ cup jarred roasted red peppers, finely diced
- 4-5 cups chicken broth
- ¾ cup heavy cream
- 8 oz frozen chopped spinach, thawed with water squeezed out
- 8 oz penne pasta
- ⅓ cup parmesan cheese, grated
- salt and pepper to taste
Instructions
- Heat a Dutch oven or large soup pot over medium-high heat. Add the avocado oil. Once hot, add the ground sausage and saute until fully cooked though
- Next, add the Italian seasoning, garlic, and red peppers. Stir everything together and cook for 1 more minute.
- Pour in the chicken broth and heavy cream and bring to a simmer. Once simmering, add the pasta and cook for about 10 minutes (or until the pasta is tender), stirring every 3-4 minutes.
- Once the pasta has cooked, add in the thawed spinach and parmesan cheese, cooking for 1-2 minutes until the spinach is heated through. Remove from the heat and serve.Serve with parmesan cheese and a sprinkle of red pepper flakes, optional.
