Lemon Shallot Vinaigrette with Fresh Herbs

Healthy Elizabeth
Prep Time 15 minutes
Total Time 15 minutes
Servings 8 (1 1/2 cups)

Ingredients

  • ½ cup champagne vinegar or white wine vinegar
  • 1 shallot, finely chopped
  • 1 lemon, juice and zest
  • 3 tbsp Stone ground mustard
  • 2-3 tbsp raw honey
  • 1 cup extra-virgin olive oil or avocado oil
  • 2-3 tbsp fresh herbs, I like basil and parsley
  • sea salt and pepper to taste

Instructions

  • In a glass jar or bowl, add the champagne vinegar along with the juice and zest of a lemon.
Finely chop the shallot and add it to the vinegar and lemon juice. Stir everything to combine and let sit for 10-15 minutes to allow the shallot to quick pickle and become milder.
  • Then add the mustard, honey, salt, and pepper to taste. Slowly drizzle in the olive oil, whisking as you add it.
  • Once the dressing is well combined, add the chopped herbs and mix again. Store covered in the fridge for up to 1 week.
