I love a good Mac and cheese, and this Healthier Broccoli Mac and Cheese has the whole family asking for more. It’s rich, creamy, gluten-free, and is an easy way to sneak in broccoli and bone broth. I love how easily it comes together and it’s so much tastier and nourishing than store-bought.

Ingredient list
To get started making this recipe, you’ll want to gather these ingredients:
- 12 oz Gluten Free Brown Rice Pasta any short pasta will work
- 12 oz frozen broccoli florets
- 2 cups grated sharp white cheddar optional: substitute yellow cheddar or a combo of both
- ¼ cup salted butter
- 2 tablespoons organic, unbleached all-purpose flour ( or 2 tbs arrowroot powder for a gluten free version)
- 2 cups whole milk
- ½ cup chicken bone broth or substitute for more half and half or milk
- ¼ teaspoon paprika
- sea salt to taste

Step by Step Instructions
Boil the pasta
- Cook the pasta according to package directions. The last 5 minutes of cook time, add in the broccoli. Drain the pasta and broccoli together.
Make the sauce
- In a large skillet over medium heat, melt the butter. Next, add the flour and whisk for 1-2 minutes, then add in the whole milk and bone broth (if using).
- Simmer for 5 minutes or until the sauce has thickened. Remove from the heat and add the shredded cheese, paprika, and salt to taste. Stir to combine.
- Gently stir in the pasta (gluten free pasta falls apart more easily than wheat pasta) and broccoli. Serve warm!

I made this tonight for dinner for my three kids and myself. Everyone loved it! I used fresh broccoli and threw it into the pot while I boiled the pasta noodles. The macaroni was creamy and delicious.
