One-Pot Creamy Italian Soup with Sausage.

Equipment

  • dutch oven

Ingredients
  

  • 1 tbsp avocado oil
  • 1 lb ground italian sausage
  • 2 tsp italian seasoning
  • 3-4 cloves garlic, minced
  • ¼ cup jarred roasted red peppers, finely diced
  • 4-5 cups chicken broth
  • ¾ cup heavy cream
  • 8 oz frozen chopped spinach, thawed with water squeezed out
  • 8 oz penne pasta
  • cup parmesan cheese, grated
  • salt and pepper to taste

Instructions
 

  • Heat a Dutch oven or large soup pot over medium-high heat. Add the avocado oil. Once hot, add the ground sausage and saute until fully cooked though
  • Next, add the Italian seasoning, garlic, and red peppers. Stir everything together and cook for 1 more minute.
  • Pour in the chicken broth and heavy cream and bring to a simmer. Once simmering, add the pasta and cook for about 10 minutes (or until the pasta is tender), stirring every 3-4 minutes.
  • Once the pasta has cooked, add in the thawed spinach and parmesan cheese, cooking for 1-2 minutes until the spinach is heated through.
    Remove from the heat and serve.
    Serve with parmesan cheese and a sprinkle of red pepper flakes, optional.

    Made this tonight for my family of five. It was SO yummy. Tomorrow, everyone has soccer and I plan to warm up the leftovers and put into thermoses so the kids have a decent dinner after school, in the car, on the way to their games. Thank you!
