This Mongolian-style ground Beef with Rice Noodles takes a takeout favorite and turns it into an easy weeknight meal made lighter. 

Rice noodles are great in this dish because they are gluten-free and take on all the flavors in the sauce easily.

I like to use ground beef because it’s always readily available in my fridge on weeknights. I know I can throw this together quickly when in a pinch!

Mongolian Style Ground Beef With Rice Noodles

Ingredients
  

  • 1 lb grass-fed ground beef or pasture-raised ground chicken
  • 4-5 cloves garlic, minced
  • ½ cup beef broth
  • cup coconut aminos
  • 2 tbsp coconut sugar
  • 1 tbsp fresh ginger, grated or 1/2 tsp ground ginger
  • ½ tbsp corn starch
  • 2 tbsp water or beef broth
  • 1 8 oz pad thai rice noodles
  • 3 tbsp scallions, thinly sliced, for garnishing

Instructions
 

  • In a small bowl, mix together the beef broth, coconut aminos, coconut sugar, and grated ginger. Set aside.
  • Cook the rice noodles according to the package instructions.
    In a skillet over medium-high heat, brown the ground beef. Drain off excess fat, then add the minced garlic and cook for 2-3 minutes.
  • Pour the beef broth sauce over the meat and stir to combine.
  • In a small bowl or measuring cup, mix together the corn starch and water with a fork or whisk until completely smooth.
    Add the slurry to the ground beef mixture and stir until the sauce has slightly thickened. Remove the pan from the heat.
  • Place the cooked and drained rice noodles on top of the beef and sauce.
    Use tongs to toss the noodles in the sauce until fully coated. Sprinkle with sliced scallions to serve.

    My husband and I made this last night after returning home from a really long day out of town and it came together so quickly, but had such great flavors. It really hit the spot. I did everything exactly as written down to the type of noodles you bought. This will definitely be printed off for recipes to keep in our collection. Our baby was too little to try this, but I know it will be a family favorite. It also heated back up in the oven really well, even the noodles, for lunch the next day. Thank you Elizabeth for blessing our family with great recipes. I love watching your videos. Do you have a cookbook??

    We are enjoying your recipes so much! This Mongolian Ground Beef is healthy and delicious just like the others have been. My family is enjoying them and I feel like we are eating more veggies in, which is really great. My husband gets tired of salad lol. We added roasted broccoli to this one. Blessings!
