Weeknight-Friendly Orange Glazed Salmon

Ingredients
  

  • 1 tablespoon avocado oil
  • 1 pound frozen salmon fillets adjust the cooking time if using fresh fillets
  • Zest of 1 orange
  • 1/2 cup freshly-squeezed orange juice roughly 1 orange
  • 2 tablespoons honey
  • 2 tablespoons tamari sauce
  • 2 cloves garlic minced
  • 1 teaspoon corn starch whisked with 1 teaspoon water
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 450°F.
  • Remove the frozen fish from all packaging and arrange the salmon on a parchment-lined baking sheet.
  • Spray lightly with oil on all sides.
  • Bake for 8-12 minutes. Remove from the oven and brush with the orange glaze

Prepare the orange glaze.

  • In a small pan over medium heat, add the avocado oil, followed by the minced garlic and cook for 1 minute, until fragrant.
  • Then whisk in the orange zest, orange juice, honey, tamari sauce, and the cornstarch that has been whisked with a splash of water.
  • Simmer the sauce for 2-3 minutes until it has thickened to a glaze consistency.

Remove the salmon from the oven and brush with the glaze

  • Brush the glaze all over the salmon after it has cooked for 8-12 minutes.
  • Now return the salmon to the oven and continue to bake until the salmon is flaky and the glaze is bubbling in the center, 5-8 minutes more.
    *Thicker fillets may need a few extra minutes to cook through and fresh fillets will need less bake time.
    Let it rest for a couple of minutes before serving. I love the serve this salmon with brown rice or a fresh cabbage slaw.
