Equipment

  • 12" cast iron skillet or similar oven-safe pan

Ingredients

  • ½ lb thick-cut bacon, cut into ½ inch strips I use kitchen scissors for this
  • 1 lb green beans, ends trimmed
  • 24 oz baby potatoes, washed and cut into halves or quarters
  • 3 tbsp all-purpose ranch seasoning or 1 store-bought ranch seasoning packet
  • 3 tbsp butter
  • 4 medium garlic cloves, minced
  • ½ cup chicken broth or vegetable broth
  • sea salt and pepper to taste
  • sprinkling fresh parsley, finely chopped optional

Instructions

  • In a large cast-iron skillet over medium heat, sauté the bacon until the fat has mostly rendered and the bacon is turning golden brown.
    Preheat the oven to 350℉.
  • Add the butter to the skillet along with the garlic and cook for 1-2 minutes. Then stir in the ranch seasoning and the chicken broth.
  • Add the greens beans and potatoes and stir until the green beans and potatoes are fully coated in the pan sauce.
  • Place in the preheated oven and cook for 30-35 minutes, or until the veggies are perfectly tender. Serve with a sprinkling of parsley.
