Ingredients
  

  • Pounds boneless, skinless chicken breasts thin-sliced
  • ¾ Cup all-purpose Einkorn flour
  • ½ Cup grated Parmesan cheese
  • 1 Teaspoon paprika
  • ½ Teaspoon garlic powder
  • ½ Teaspoon onion powder
  • salt and pepper to taste
  • 2 eggs for dredging the chicken
  • avocado oil for pan frying

Instructions
 

  • In a shallow bowl, combine the flour, Parmesan, paprika, garlic powder, onion powder, salt and pepper.
  • In another shallow bowl, crack the eggs and whisk them together.
  • Preheat a skillet over medium heat.
  • Dredge the chicken in the egg wash and then into the flour and Parmesan mixture.
  • Add a light coat of avocado oil to the pan and cook the chicken for 4-5 minutes on each side until the chicken is fully cooked through and the crust is golden brown.

Notes

If your skillet is too hot and the chicken browns too quickly, place the chicken on a baking sheet and bake in a preheated oven at 375 until fully cooked through.
