Equipment

  • grater or food processor with shredder attachment optional

Ingredients

  • 1 whole green cabbage or red cabbage
  • ½ small sweet onion or Vidalia onion thinly sliced, or ¼ of a medium sweet onion
  • cup apple cider vinegar I use Fairchilds (its undiluted)
  • ¼ cup olive oil
  • 3 tablespoons raw honey
  • 2 teaspoons dry oregano
  • salt and pepper to taste
  • 2 tablespoons filtered water
  • sprinkle sweet paprika optional for topping

Instructions

Prep the cabbage

  • Make 4 cuts around the core of the cabbage, to core it. Next, using a box grater, crate each quarter of the cabbage to shred it.
  • Thinly slice the onion.

Make the dressing

  • In a medium bowl, combine the apple cider vinegar, olive oil, raw honey, oregano, salt, pepper, and filtered water. Stir well.
Now add the shredded cabbage and sliced onion. Stir or massage the cabbage until everything is fully incorporated.
Sprinkle with sweet paprika. Best served after being chilled for at least a couple of hours.
