Sheet Pan Sausage and Pierogi with Cabbage.

Ingredients
  

  • 1 lb kielbasa sausage, cut into ½ inch slices
  • 1 lb frozen pierogies, any flavor
  • ½ medium green cabbage, core removed and thinly sliced
  • 1 medium sweet onion, thinly sliced
  • ¼ cup avocado oil
  • 2 tbsp salted butter, melted
  • 1-2 tbsp apple cider vinegar to taste
  • ½ tbsp honey
  • 2 tbsp flat-leaf parsley, finely chopped
  • ½ tsp garlic powder
  • salt and pepper to taste
  • sour cream, optional for topping

Instructions
 

  • Preheat the oven to 400℉. Spray a baking sheet with avocado oil spray.
  • In a large mixing bowl, add the cabbage, kielbasa, onion, and pierogi and toss them in avocado oil.
    Season with salt and pepper and spread everything out on the baking sheet.
  • In a separate small mixing bowl, combine the melted butter, apple cider vinegar, honey, garlic powder, and chopped parsley. Stir until well combined.
    Set aside.
  • Bake in the preheated oven for 45-50 minutes, flipping everything halfway through.
    The last 5 minutes of baking, drizzle everything with the melted butter mixture and toss everything once more to coat.
    Serve with a dollop of sour cream if desired.
