Preheat the oven to 400℉. Spray a baking sheet with avocado oil spray.
In a large mixing bowl, add the cabbage, kielbasa, onion, and pierogi and toss them in avocado oil. Season with salt and pepper and spread everything out on the baking sheet.
In a separate small mixing bowl, combine the melted butter, apple cider vinegar, honey, garlic powder, and chopped parsley. Stir until well combined. Set aside.
Bake in the preheated oven for 45-50 minutes, flipping everything halfway through.The last 5 minutes of baking, drizzle everything with the melted butter mixture and toss everything once more to coat.Serve with a dollop of sour cream if desired.
