Lemony Lettuce and Feta Salad.

Ingredients
  

  • cup extra virgin olive oil
  • 1 large lemon, juiced
  • salt and pepper to taste
  • 2 hearts romaine lettuce
  • 4 scallions, diced white and green parts
  • 4 oz feta cheese, cut into cubes or crumbled

Instructions
 

  • In a large salad bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Next, thinly slice the romaine lettuce into shredded lettuce. Place the lettuce in the bowl with the salad dressing.
  • Add the sliced green onions to the salad and toss everything together, massaging the dressing into the lettuce.
  • Top with cubes or crumbles of feta cheese. Best served fresh!
