Ingredients
  

  • 1 3½ pound organic, free range whole chicken rinsed and pat dry
  • 2 tablespoons avocado oil
  • 8 small cloves garlic, minced 1/2 a bulb per chicken
  • teaspoons sea salt
  • 1 teaspoon black pepper

Instructions
 

  • Preheat the oven to 425℉.
    In a small bowl, mix the oil, garlic, salt, and pepper.
  • Place the chicken on a parchment lined baking sheet.
    Rub the oil coating all over and under the skin of the chicken. Place the chicken breast side down.
  • Roast the chicken for 15 minutes then flip the chicken and roast for another 15 minutes at 425℉.
  • Next, lower the oven temperature to 375℉. Continue roasting the chicken for another 30-40 minutes (depending on the size of your chicken). Cook till the chicken reaches 165℉
    Spoon the juice over the chicken one time during the roasting process.
  • Remove the chicken from the oven and let it cool for 10 minutes before carving. Serve hot or cool and place in the fridge.
