Preheat the oven to 425℉.In a small bowl, mix the oil, garlic, salt, and pepper.
Place the chicken on a parchment lined baking sheet.Rub the oil coating all over and under the skin of the chicken. Place the chicken breast side down.
Roast the chicken for 15 minutes then flip the chicken and roast for another 15 minutes at 425℉.
Next, lower the oven temperature to 375℉. Continue roasting the chicken for another 30-40 minutes (depending on the size of your chicken). Cook till the chicken reaches 165℉Spoon the juice over the chicken one time during the roasting process.
Remove the chicken from the oven and let it cool for 10 minutes before carving. Serve hot or cool and place in the fridge.
