Easy Pan-Fried Cabbage Fritters.

Ingredients
  

  • 1 small green cabbage about 7 cups of shredded cabbage
  • 2 small carrots
  • 2-3 scallions thinly sliced
  • 3 large eggs slightly beaten
  • 4-5 tablespoons all-purpose flour
  • 2 cloves garlic finely minced or crushed
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2-3 tablespoons avocado oil for pan-frying

Instructions
 

  • Shred the cabbage and carrots on a box grater and place in a large mixing bowl.
    You can also do this in a food processor fitted with a shredding attachment.
  • Thinly slice the scallions (white and green parts), and mince or crush the garlic cloves. Add the scallions and garlic to the mixing bowl.
  • Next, add the slightly beaten eggs to the mixing bowl, along with the flour, and seasonings. Mix everything together until it has all been coated evenly in the egg and flour.
  • Preheat a large skillet over medium heat for about 4 minutes.
    Once the pan is hot add a couple tablespoons of avocado oil. Let the oil heat for 1 minute.

Form the fritters

  • Using an ice cream scoop or just your hands, form a ball about the size of your palm, place it on the skillet, and press down with your hand or a spatula until the fritter is about 1/4 an inch in thickness.
  • Fry the cabbage fritters for 3-4 minutes on each side until they are a deep golden brown color. Remove to a plate.
    Optional: sprinkle with a little extra salt and sliced scallions.
    Serve warm with sour cream or hot sauce.
