Chutney Chicken Salad

Ingredients
  

  • ½ cup plain whole milk greek yogurt
  • ¼ cup good mayo
  • cup Major Grey's Chutney
  • 1 tsp lime zest
  • 2 tbsp lime juice
  • ½ tsp curry powder
  • 13 ¼ oz can pineapple tidbits or chunks, drained
  • 1 cup thinly sliced celery
  • ½ cup green onions, thinly sliced
  • ½ cup sliced almonds optional: lightly toasted
  • 4 cups cooked and chopped chicken breast
  • salt and pepper to taste

Instructions
 

  • In a mixing bowl, combine the greek yogurt, mayo, chutney, lime zest, lime juice, curry powder, salt and pepper. Mix well.
  • Next, gently fold in the rest of the ingredients ( I like to reserve some of the green onions and sliced almonds to sprinkle on top as a garnish).
    Cover and chill for at least 3-4 hours, the longer the better, to allow the flavor to develop.
    Before serving, sprinkle with sliced green onions and a few sliced almonds. Serve cold. Enjoy!
