Sauerkraut Salad

Ingredients
  

  • 16 oz jar sauerkraut or homemade
  • 1 ½ tbsp olive oil or avocado oil
  • ½ sweet onion thinly sliced
  • 1 medium carrot peeled then grated
  • ½ apple chopped
  • 2 tsp coconut sugar
  • Salt and pepper to taste
  • 1 tbsp Fresh parsley or dill optional

Instructions
 

  • Drain the liquid from the sauerkraut and place in a medium mixing bowl.
    Add the oil, onion, carrot, apple, coconut sugar, and fresh parsley or dill (if using)—season with salt and pepper.
    Mix everything together and check for seasoning.
  • Best eaten within 1-2 days, as the apple will start to brown.
