Sauerkraut Salad
Ingredients
- 16 oz jar sauerkraut or homemade
- 1 ½ tbsp olive oil or avocado oil
- ½ sweet onion thinly sliced
- 1 medium carrot peeled then grated
- ½ apple chopped
- 2 tsp coconut sugar
- Salt and pepper to taste
- 1 tbsp Fresh parsley or dill optional
Instructions
- Drain the liquid from the sauerkraut and place in a medium mixing bowl.Add the oil, onion, carrot, apple, coconut sugar, and fresh parsley or dill (if using)—season with salt and pepper.Mix everything together and check for seasoning.
- Best eaten within 1-2 days, as the apple will start to brown.
