Pecan Sandies Cookies

Equipment

  • baking sheet
  • cookie dough scooper
  • hand mixer

Ingredients
  

  • 2 sticks salted butter
  • 3/4 cup cane sugar
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1 cup pecans chopped small
  • Powdered sugar for dusting the cookies with after baking.

Instructions
 

  • Preheat oven to 350 F. In a mixing bowl, cream together the butter, sugar, and extracts until light and creamy.
  • Add the flour and nuts and mix again until just combined. Chill for 15 minutes.
  • Using a medium cookie scoop, scoop the dough and roll into a ball.
    Place on a parchment-lined baking sheet and bake for 8-10 minutes.
  • After baking, remove to a wire rack to cool.
    Sprinkle with powdered sugar while the cookies are still warm.
