Pecan Sandies Cookies
Equipment
- baking sheet
- cookie dough scooper
- hand mixer
Ingredients
- 2 sticks salted butter
- 3/4 cup cane sugar
- 1/2 tsp almond extract
- 1/2 tsp vanilla extract
- 1 3/4 cup all-purpose flour
- 1 cup pecans chopped small
- Powdered sugar for dusting the cookies with after baking.
Instructions
- Preheat oven to 350 F. In a mixing bowl, cream together the butter, sugar, and extracts until light and creamy.
- Add the flour and nuts and mix again until just combined. Chill for 15 minutes.
- Using a medium cookie scoop, scoop the dough and roll into a ball. Place on a parchment-lined baking sheet and bake for 8-10 minutes.
- After baking, remove to a wire rack to cool. Sprinkle with powdered sugar while the cookies are still warm.
