Cinnamon Coconut Sugar Apple Bread.

Cinnamon Coconut Sugar Apple Bread is full of warming cinnamon, tender apples, and coconut sugar for wholesome sweetness on cozy days!

Equipment

  • 8 x 5 loaf pan

Ingredients
  

  • ½ cup coconut sugar
  • tsp cinnamon
  • 2 eggs
  • ½ cup raw cane sugar
  • ½ cup melted butter, salted
  • 1 tsp vanilla extract
  • cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • 2 cups baking apples, peeled and chopped honey crisp, Granny Smith

Instructions
 

  • Preheat the oven to 350℉. Butter and flour an 8 x 5 loaf pan or line it with parchment paper. Set aside.
  • In a small bowl, combine the coconut sugar and cinnamon. Set aside.
  • In a large mixing bowl, whisk the eggs and raw cane sugar together. Add in the melted butter and vanilla extract and whisk to combine.
  • Next, add in the all-purpose flour, baking powder, baking soda, and salt. Stir everything together until a thick batter forms.
    Fold in the apples (or layer them into the loaf pan- see video).
  • Pour half of the batter into the prepared load pan. Next sprinkle over two-thirds of the cinnamon and coconut sugar mixture.
    Spread the rest of the batter on top and sprinkle with the remaining coconut cinnamon sugar.
    Swirl the top of the loaf with a butter knife.
  • Bake the bread for 35-45 minutes or until the top is golden brown and a toothpick comes out clean from the center of the loaf.
    (cover the bread the last 15 minutes or so if it is browning too quickly.)
  • Let the bread cool in the loaf pan for 5 minutes before turning out and placing on a cooling rack to finish cooling.
    Cool fully before slicing and enjoying!
